Each stop offered a complete experience: a meticulously crafted dish, a wine thoughtfully selected by expert sommeliers, and all around, the music, colors, and voices of a world unfolding.</span><br data-start="451" data-end="454"><span style="font-family: Livigno, Arial, sans-serif;">The dishes and wines presented had deep roots and a forward-looking spirit—refined and surprising at the same time.</span></p> <p data-start="76" data-end="421"><span style="font-family: Livigno, Arial, sans-serif;">The journey begins in Africa with the appetizer </span><span style="font-family: Livigno, Arial, sans-serif; font-weight: bold;">Amani Africana</span><span style="font-family: Livigno, Arial, sans-serif;">: Arabic bread topped with black grouper tartare marinated in fermented lemon, coriander, and mint, completed with onion chutney, osmosis cucumber, tomato-almond harissa (with Meknes almonds), and paired with Chenin Blanc 2024 Mooiplaas – Stellenbosch (South Africa). </span><span style="font-family: Livigno, Arial, sans-serif;">Next stop: Europe, featuring </span><span style="font-family: Livigno, Arial, sans-serif; font-weight: bold;">two-tone tortelli </span><span style="font-family: Livigno, Arial, sans-serif;">filled with basil and mascarpone, sautéed in whipped butter and served with julienned cuttlefish marinated in lemon. The dish is finished with fresh tomato air, crunchy black bread chips, and a glazed basil leaf. Paired with Gourmet Rosé Brut 2019 Istenic (Slovenia). </span><span style="font-family: Livigno, Arial, sans-serif;">For the intermediate dish, the spotlight shifts to Oceania with </span><span style="font-size: 1.7rem; letter-spacing: 0.015rem; background-color: transparent; font-family: Livigno, Arial, sans-serif; font-weight: bold;">Terra e Mare</span><span style="font-family: Livigno, Arial, sans-serif;">: Australian salmon marinated in coconut water and spirulina (giving it a blue hue), served with sweet potato gelato and crispy yellow corn chips. The pairing wine is Chardonnay Greywacke 2022 Marlborough (New Zealand). </span><span style="font-family: Livigno, Arial, sans-serif;">Asia takes over for the main course with </span><span style="font-size: 1.7rem; letter-spacing: 0.015rem; background-color: transparent; font-family: Livigno, Arial, sans-serif; font-weight: bold;">Bosco d’Oriente</span><span style="font-family: Livigno, Arial, sans-serif;">: Asian-style duck breast with a sweet-and-sour kumquat jus, served with pak choi and steamed rice. A theme chosen to celebrate Livigno’s role as one of the host locations for the Milano Cortina 2026 Winter Olympics. Once again, Livigno confirms its true spirit: authentic, and able to reinvent itself with style. Here, the mountains are not just about tradition—they are about innovation, exploration, and aesthetics. A perfect balance that’s also reflected in the dishes crafted by the Association of Chefs and Pastry Chefs of Livigno (ACPL), the creators of the event. Each stop offered a complete experience: a meticulously crafted dish, a wine thoughtfully selected by expert sommeliers, and all around, the music, colors, and voices of a world unfolding.
